This is one of my favorite recipes from @instantloss! Chicken Veggie Curry (Instant Pot) Ingredients: -1 pound chicken breast -2 tbsp coconut aminos -1 tbsp fish sauce -1 can coconut milk -4 oz red curry paste (Thai Kitchen) -1 tsp ground ginger -1/2 tsp salt -1/4 tsp pepper -1/2 yellow onion -6 cups stir fry veggies Instructions: 1. Put all ingredients except the veggies in the Instant Pot. Cook on manual/high for 40 minutes for frozen chicken or 30 minutes for non frozen chicken. 2. If using frozen veggies, take them out to start thawing as the chicken is cooking. 3. When instant pot reaches 0, do a quick release. 4. Take out chicken and cut into small pieces. 5. Stir back in chicken and veggies. 6. Put lid on until veggies are cooked (10 minutes). Servings: 6 Cal 301 | Fat 12.3g | Carbs 16.2g | Fiber 3.8g | Protein 28.8g
